STRAWBERRY, APPLE & HONEY MUFFINS

After a massive strawberry debacle here in Australia, I thought what better way to utilise Aussie strawberries than to use them in a delicious baked good. Super tasty, easy to make and great to grab on the go if you're late to work or uni!

Ingredients:
1 1/2 cups wholemeal flour
1 cup quick cooking oatmeal
1/4 cup light brown sugar
1 teaspoon ground cinnamon
1 tsp baking soda
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1/2 cup milk or apple cider
1/2 cup honey
1/4 cup butter or Nutlex
1 teaspoon vanilla
1 cup finely chopped apple
1 cup of strawberries diced
Method:
1. Set the oven to 160 degrees celcius fan-forced (180 non-fan forced) .
2. In a large mixing bowl, add the flour, oats, baking soda, cinnamon and mix.
3. In a seperate bowl, mix the milk, honey, vanilla, eggs and oil/nutlex.
4. Make a well in the dry ingredients and add the wet ingredients. Fold together until combined. Fold in the chopped apple, along with half the diced strawberries.
5. In a lined muffin tray, spoon the mixture until all 6 are even. Add remaining strawberries on top and a sprinkle of dry oats. Bake for 22-25 minutes or until you can poke a skewer through and it comes out clean.
