BASIC SCONES

If there are two things my mum loves at our local grocery store, it's scones from the bakery section. I've always been aware of how easy they are to make, but i had never actually gotten around to making them. Until now!


Serves: 12

Time: 35 minutes


Ingredients:

3 cups of self-raising flour (white)

TBS of plain flour

80g of chilled butter

1 1/4 cup of milk (I used oat)

Jam or preserve to serve

Whipped cream


Method:

1. Preheat the oven to 200 degrees celsius.

2. Sift the self-raising flour into a large mixing bowl.

3. Cube the butter, and rub all cubes into the flour until it they form a crumb like consistency in the flour.

4. Create a well in the middle of the flour and butter mixture and pour the milk in the centre.

5. Gently mix together. Once combined, tip over onto a lightly floured surface and knead until just smooth.

6. Roll out the dough until it is 2cm thick. Cut out circles approximately 5cm in diameter. Take remaining dough repeat process until 12 circles are cut out.

7. Line a baking tray, lightly flour. Lay all scone cut outs 1cm apart and lightly brush with milk.

8. Bake in the oven for 20-25 minutes (or until golden on top). Remove and let it cool on a cooling rack.

9. Serve while warm with preserve and jam.
