BANANA BLUEBERRY OAT SLICE

So, if you're a sugar fiend like me you tend to crave in the afternoon, or perhaps straight after dinner as dessert. Unfortunately I'm on a bit of a health kick so I'm trying to reduce my sugar intake, and decided to make this recipe as a way to satisfy my sweet addiction without completely removing it from my diet. Over-ripe bananas have this super delicious sweetness that can help curb that craving so today I've decided to utilise them in this banana blueberry oat slice! Hope you enjoy!

Serves: 12
Time: 40 Minutes
Ingredients:
2 cups rolled oats
1 TBL wholmeal flour
1/2 cup of honey or rice malt syrup
1 teaspoon baking powder
2 teaspoon cinnamon
1/2 teaspoon salt
2 cups oat milk
1 large banana, mashed
1 large egg or flax egg
1 teaspoon vanilla
3 tablespoons nutlex or vegan butter
1 Punnet of blueberries
Method:
Preheat oven to 180 degrees celsius and line an over tray (or in my case a pie dish), with baking paper.
Add the oats, baking powder, cinnamon,and salt in a medium bowl and stir to combine. In another large bowl, whisk together the milk, banana, egg (or flax egg), and vanilla. Slowly pour in the melted nutlex whisking constantly.
Add the oat mixture into the wet ingredients and stir to combine. Toss 3/4 punnet of blueberries in flour, and fold gently into the mixture.
Transfer to the baking dish and garnish with remaining blueberries. Bake for 25 minutes.
