OATY BLUEBERRY MUFFINS

Ingredients:

  • 1/2 cup melted coconut oil or Nutlex

  • 1/2cup maple syrup or honey

  • 2 eggs, preferably at room temperature

  • ¼ cup milk of choice or water (I used oat milk)

  • 1 teaspoon baking soda

  • 1 teaspoon vanilla extract

  • 1/2 tsp salt

  • 1/2 tsp cinnamon

  • 1 3/4 cup of wholemeal flour

  • 1/2 cup old-fashioned oats, plus more for sprinkling on top

  • 1 punnet of Blueberries


Method:

1. Set the oven to 180 degrees celcius fan-forced (200 non-fan forced) .

2. In a large mixing bowl, add the flour, oats, baking soda, cinnamon and mix.

3. In a seperate bowl, mix the milk, honey, vanilla and oil/nutlex.

4. Make a well in the dry ingredients and add the wet ingredients. Fold together until combined.

5. Toss the blueberries in a bowl with a bit of flour, and fold into the mixture.

5. In a lined muffin tray, spoon the mixture until all 6 are even. Add blueberries on top and a sprinkle of dry oats. Bake for 22-25 minutes or until you can poke a skewer through and it comes out clean.
