BASIC CREPES

With banana, strawberries and Nutella.


When I was in high school, more specifically senior year, one thing my best friend and I would do is go to our local ice cream parlour and demolish a plateful of crepes each. My usual order was a Nutella crepe with strawberries and banana AND a scoop of boysenberry ice cream, while my friend enjoyed one with Nutella, Banana AND a scoop of coffee gelato. So, in memory of my high school days, here's my own crepe recipe. Enjoy!

Time: 30 minutes


Ingredients:

  • 1 cup of white flour

  • 2 tbs caster sugar

  • 2 Eggs

  • 3/4 cup Milk

  • 1/2 cup Water

  • 1 teaspoon Vanilla Extract

  • 3 tablespoons Butter ,melted (in my case i used Nutlex)

  • Butter for pan


Method:

  1. In a large mixing bowl, place the flour and sugar into a bowl. In a seperate bowl, mix the eggs, milk, water, vanilla and melted butter and mix until fully combined.

  2. Form a well in the dry ingredients and gently pout the wet in the centre. Stir until combined.

  3. Place batter in the refrigerator and let sit for 1 hour. 

  4. When the batter is ready heat a small non-stick pan over medium high heat. 

  5. Lightly butter the pan then lift it off of the heat and pour 1/4 cup of the crepe batter into the pan swirling it around so the batter runs to the edges of the pan making a thin circular crepe. Place the pan back on the heat and cook for 30 seconds (or until bottom begins to brown) then flip and cook for 30 seconds on the other side. 

  6. Turn the finished crepes out on to a plate.

  7. Repeat the process until all of the crepe batter has been used. 

  8. Once the crepes are made you can begin filling. Fold each crepe in half making a half circle. Then spread 1-2 tablespoons of Nutella on each crepe.

  9. Cover 1/2 of the folded crepe with sliced strawberries and bananas and then fold one side up and over to make a triangle. Repeat 11 times.
