SOFT EGGS & SOLDIERS

Some days you’ve just gotta settle for soft boiled eggs and a row of toasty buttered soldiers. By the way, I’m totally not knocking eggs, it’s actually so nice to bring it back to basics! Reminds me of my childhood if anything. I mostly remember sitting on the breakfast bar of my aunty’s house and happily dipping my toast barons into the gooey, rich yolk.


Serving: 1

Time: 10 minutes


Ingredients:

2 Free ranged eggs

2 pieces of sliced bread

Nutlex or butter

Salt and pepper to garnish


Method:

1. Place two eggs into the a small saucepan and fill with water until it just covers the eggs.

2. Place on a hot hob, and bring to boil. Boil the eggs for 7 minutes for set whites and a gooey yolk centre. Leave for an additional 1.5 minute for a medium set yolk.

3. Toast two slices of bread and spread with nutlex while warm. Slice them into batons.

4. Remove eggs, place into egg cups and enjoy with your toasty dippers!


TIP: Remember, you want a soft yolk so you can dip your soldiers in!
