AVO TOAST & EGGS

Who needs a cafe that charges $16+ for avo toast when you can make it at home? This week I'm totally taking advantage of the cheap avocados that are selling for only $2 each! Topped with a fresh boiled egg and some spicy chilli flakes, you've got yourself a simple, cafe style breakfast!

Serves: 1
Time: 10 minutes
Ingredients:
1 large slice of bread
1 boiled egg (could easily eat 2)
1 Avocado
Squeeze of lemon
Chilli flakes
Salt and Pepper
Sprinkle of black sesame seeds
Method:
1. Place on a hot hob, and bring to boil. Boil the eggs for 7.5 minutes for set whites and a semi gooey yolk centre.
2. In a small bowl, combine the avocado, a squeeze of lemon and some salt and pepper. Smash together with a fork and spread ontop a slice of toasty, crusty bread.
3. Place the eggs in a bowl of cold water and peel. Slice the egg and place ontop of the avocado toast.
4. Garnish with chilli flakes, corriander, sesame seeds and some more salt and pepper.
