SAVOURY HAM, CHEESE AND EGG CREPES

After my very first attempt making the sweet Nutella crepes, I thought, why not a savoury crepe? My boyfriend and I are total nutters for egg and bacon so I thought I'd try and incorporate it in a tasty crepe form.


Ingredients:

Servings: 12 Time: 30 minutes Ingredients:

  • 1 cup of white flour

  • 2 Eggs

  • 3/4 cup water

  • 1/2 cup of milk

  • 1 teaspoon Vanilla Extract

  • 3 tablespoons Butter ,melted (in my case i used Nutlex)

  • Butter for pan

  • Smoked Ham

  • Eggs

  • Tasty Cheese

  • Spinach

  • Pepper

  • Salt

Method:

  1. In a large mixing bowl, shift the flour. In a seperate bowl, mix the eggs, milk, water and melted butter and mix until fully combined.

  2. Form a well in the dry ingredients and gently pout the wet in the centre. Stir until combined.

  3. Place batter in the refrigerator and let sit for 1 hour. 

  4. When the batter is ready heat a small non-stick pan over medium high heat. 

  5. Lightly butter the pan then lift it off of the heat and pour 1/4 cup of the crepe batter into the pan swirling it around so the batter runs to the edges of the pan making a thin circular crepe. Place the pan back on the heat and cook for 30 seconds (or until bottom begins to brown) then flip and cook for 30 seconds on the other side. 

  6. Turn the finished crepes out on to a plate.

  7. Wash out the non-stick pan, and place on medium heat. Add a bit of oil and break 2 eggs into the pan. Cover with a lid and cook until the whites are completely cooked and the yolk is still runny.

  8. Take a crepe, add a slice of tasty cheese, layered with ham and then spinach. Add the sunny side up egg, and told in the side. Add cheese on top to garnish.
