GOOD MORNING OMELETE

Start the morning off right with a fast, healthy omelette. Super easy to make, and even easier to eat.

Serves: 1
Time: 15 minutes
Ingredients:
3 eggs
Handful of Mushrooms
1 Avocado diced
Handful of spinach
Tbs Feta cheese
Salt
Pepper
Olive oil
Method:
1. Chop up the handful of mushrooms, and add to a non-stick pan on medium high heat. Add a knob of butter, along with some salt and better and cook until mushrooms are tender. Place aside in a bowl.
3. Wash out the pan, and put aside to use for the omelette. Add three eggs to a bowl and give it a whisk with some salt and pepper. Place the non-stick pan on a medium heat and add a little drizzle of olive oil.
4. Add the eggs and give it a quick whisk in the pan as it cooks.
5. As the eggs are cooking, take the spinach, mushrooms and avocado and place onto one semi-circle half of the omelette.
6. Fold over the ungarnished side, and gently slide onto plate. Garnish the whole omelette with fetta cheese.
