AVO BREAKFAST BRUSCHETTA

Why pay $16+ for avocado toast when you can prep your own at home for half the price! Simple, tasty and oh so cheap!


Ingredients:

1 Avocado sliced

1 cup of cherry Tomatoes

Handful of basil

Drizzle of balsamic glaze

1 jar of Pesto

1 cup of bocconcini cheese

Salt

Pepper

Sourdough bread or any crusty loaf


Method:

1. Slice the bread to your desired size and toast in a toaster. If it's too thick for the toaster, toast in the oven.

2. Slice up the cherry tomatos in halves, as well as the bocconcini and finely chop the basil.

3. Remove the toasted bread from the toaster or oven, and spread with pesto.

4. Garnish with sliced avocado, cheese, cherry tomatoes and basil. Finally finish off with salt and pepper and a generous drizzle of balsamic glaze.
